Some refer to this region as the ‘Bread Basket’ of Italy and yes there are some of the best pasta in the country, especially stuffed pasta like lasagna, ravioli, cannelloni, tortellini or cappellacci and tortelloni. Its the home of the most famous ‘sugo’ (meat sauce) in Italy, the ‘Sugo Bolognese’. Other great pastas include the garganelli (rolled shells), strichetti (bowtie) and other broad noodles and spaghetti style. The area is most famous for the Balsamico vinegar from Modena and the Prosciutto di Parma and Parmigiano-Reggiano cheese. To finish off a good meal, Zuppa Inglese (ladyfinger biscuits soaked in a red cinnamon, clove, vanilla liqueur called Alchermes and covered with custard) was invented here. Other after dinner favorites include ‘Sabadoni’, stuffed pastries with all kinds of different fillings or the famous Rice cake.
One of the specialties from the area near Rimini and San Martino is the ‘Piadina’ an Italian version of the tortilla with various toppings.
If you like sparkling young red wines, this is the Lambrusco country.
