FOOD AND RESTAURANTS
The Pays Basque has similar styles of food to the Spanish Basque with Pintxos (tapas), chistorra (garlic and paprika-flavoured sausage), and Bayonne ham (similar to Jamon seranno), Poulet Basquaise (roast chicken with peppers and onions), Basque piperade (an omelette with red peppers, tomatoes and spices), Basque pig ( a local specialty), marmitako (fish stew), Axoa (veal casserole) and soft Brebis cheese (sheep’s milk) usually eaten with fresh jam.
